Take the Cake: Bite-sized Inspiration for the Savvy Baker

Have you ever tried the Chai from our friends at DONA in Brooklyn?

Well if you haven’t, now’s your chance! Dona is known best for their amazing masala chai and turmeric concentrates. And they are nothing short of AMAZING.

You might wonder why we decided to put chai spice mix in our new Chai Spice Bundt Cake — it all comes down to top-line ingredients and unique flavors. Plus, we get to work with our friends and another Brooklyn-based company. YAY.

Dona begins with supreme ingredients. They source spices from collectives across the world, paying attention to place of origin, growing conditions, and end quality.

Each spice is cupped to test for flavor profile, natural sweetness, and body. The brewing process begins with whole spices that are ground fresh per batch.

Then, their spices are slow steeped to build complexity. The result is a full-bodied and balanced tea concentrate. If you buy it and mix equal parts with milk, you’ll have a bold and flavorful latte. The perfect afternoon pick-me-up!

We reallllly wanted to create a recipe with chai, because it’s such an elegant and delicious flavor. Then we thought – who better to pair up with than Amy & Peter at Dona?! We tested a few versions of the resulting Chai Spice Bundt Cake with the company’s chai spice mix blend (the stuff they use in the concentrate), until we got it just right. No one seemed to mind a few rounds of taste-testing :).

We wanted chai to be everywhere. So we infused it in the center with a cinnamon brown sugar chai streusel filling.

AND, we put it in the glaze on top of the cake.

The result was pretty darn magical.

Doesn’t this cake just look like heaven on a plate? We know you’re going to love the spices in this buttery bundt. Think Chai Latte in cake form. But better. YUM!
